I'm slowly but surely getting the deadening done on my truck. But I am stuck on what form of deadening to use on the backs of my door panels.

Should I continue using a mat based deadener, or should I switch over and use a spray-on type? What one would be the most effective?

If you do the liquid stuff it would need to be as thick as a mat anyway to get the same effectiveness. I would just do a mat dawg, then you can just cut it an inch away from the sides so it will clip back in.

Keep in mind that water based vibration coatings will not adhere to plastic permanently.
You are better off going with a vibration mat followed by some open celled foam, or a good closed cell foam that can compress very well.. The mat will reduce resonance in the plastic, while the foam will isolate the plastic from the metal.
