For the truck, I have a Metra 70-1398 receiver wiring harness. For the receiver, I have the Sony wiring harness. Can I assume that Sony and Metra are 100% in sync in their choice of wire colors - can I just match white to white, white/stripe to white/stripe, etc.?

I have used well over a dozen Metra harnesses over the years, they've always been as simple as described. Given you are properly making the connections. Bad things can happen fast if the connection fails (loose, energized wire), or is not properly insulated.
