I thought I would be brave enough to make these fit in my doors but it's going to be impossible without cutting the door panel. They're also by far best put in an enclosure, so I'm going to look for a more suitable driver as door midbasses.

It's called ES-06+. These don't appear to be from the latest run based on the spec sheet I have, but compared to QES-680 listed on the CDT store site, these look like they would perform very similarly.

Any thought on how these would work in an infinite baffle mid-bass application? Want to set up a 4-way active system in my car, got a 12" thumping in the trunk and these would go into the rear deck. Thoughts?

These are spec'd more for enclosures or door mount, but people have used subwoofers in an IB install when the manufacturer specifically advised not to do it. What you might want to do is build small boxes to seal up to the rear deck.
