So often I’ve read magazine articles where the installation has used OEM carpet, vinyl, leather, etc upholstery materials but where is a source for these materials? As far as I know you can’t just walk into a parts department of a dealership and order a yard or two of factory carpet. Is there an aftermarket source of these OEM materials?

Lots of automobile carpet manufacturers have factory identical carpet, I'd imagine upholstery manufacturers do too.
