I am overhauling the stereo in my truck, I've already bought my amps and speakers.

I recently changed my mind and switched from an AX-DSP to the Amp Pro Ap4-Gm61.

The amp pro is a 4v or 5v output.

My 4 ch amp only has a 2v input sensitivity. If I turn my gains all the way down, think I'll be ok? Would a inline attenuator help?

Can you not just turn the output down on the dsp/device/whatever it is? But essentially it’s a case of try it, in reality the output of the device before the amp will only go to 4/5v at full pelt, in reality on music it will be a load of db’s down so it will doubtless be fine regardless unless you’re playing bass cds or similar 👍🏼

I only used Eclipse HU's for years. They have 8v outputs when most stuff had .5v - 2v sensitivity. Never caused a problem that I noticed. That 2v difference, even at full tilt, won't hurt.
