I have a 2015 Kia Optima with the Infinity Sound System in it. It states in the documentation that the Factory Head Unit connects to the Amplifier via Optical. Could I add an Audison BitOne with Optical In and Out in between the Factory stuff to get processing power?

I am in the same boat as I also have a 2015 Optima with the Infinity Sound System and I am in the process of planning out an aftermarket build.
From what I have found out, Yes you can tap the Optical out but you will lose volume control, fad and balance and the basic built in head unit EQ. I am not sure about the collision avoidance beeps nor the navigation directions.

Does your oem amp have an optical in from the deck?

I have a Harmon Kardon factory system with subwoofer and it is quite good even compared to my other mega full custom system
All you may want to do is add a separate real sub and amp.
Another option would be for you to open the amp and tap low level outputs before the PA modules. That way you can run separate amp systems. I did that to my C240 HU. works nicely thru my JBL MS8

The kia system has several issues that can not be fixed without an aftermarket dsp. If you look at my build log for my kia optima, you'll see the infinity systems stock frequency response, and how bad it really is.
edit, I didn't post that yet, I'll post it this afternoon. Fyi, there's a 40db broad peak in response in the bass/midbass.
What's worse, is that I'm not convinced you can get a full range analog signal from 6 channels, which would rule out most dsp'dsp's. The infinity system has a full 3 way active front stage, plus subwoofer.
I'll post more on the subject later today when I'm not on my phone.

40dB seems.. um unusual... How did you measure this? in car with a sound level meter? RTA? Very odd indeed...to the point of being unbelievable.

But again.... Infinity, JBL, Harman Kardon. All the same company. If they are using technology similar to the JBL MS8 then you have a great system.
Back to the HK system in my Mercedes R class. It sounds very very good. especially with the Logic 7 surround. Do you have a center speaker?
I have been toying with the idea of adding to it. My first concern would be if it is equalized. I would have to do a frequency response test from AUX in (or test tones on a cd) to the amp speaker outputs.
If there is equalization I would have to judge what it is correcting for. Driver response or cabin response. What about time alignment? I would have to consider this before upgrading speakers. Also I am not sure if the front mid/tweets are active or passive. The car wiring diagram is unclear on that. The frequency response test would determine this too.
The next question is adding power amps. Do I use line level outputs or do I try to hack into the amp to get to low level signals as I did on my MB C240 Head unit. I have that as a document if you wish. I posted it here a few years ago.

It's a pita to link on my phone, but I'll get it linked when I'm home from work.
I was in disbelief myself, but I knew something was off. Just didn't realize the severity. Andy from Audiofrog and previously from jbl saw the rta and said it was horrible, that they really botched the tuning. He also hates his MB harmon system.
To get the measurements, I used my laptop with a dayton calibrated mic, and room eq wizard, running sweeps. It definitely has time alignment and eq applied. It actually images really well for a stock system, but the response starts to drop quickly at 50hz, and peaks from 50hz to a little over 100hz. That's the huge peak I was talking about. I have my stock "bass" setting at -6 just for it to sound listenable.

This is the stock frequency response, taken with the omnimic and REW, using sweeps, mic in the head position, seat all the back. All settings dead flat as they were stock.
