It's not a bad practice. Some amps (usually not car audio) come stock with fused outputs.

I'm just not sure what you'd be protecting. Probably your speakers more so than your amp. If your amp is popping an output fuse, it's probably already suffered a catastrophic fault in its output stage -- and transistors pop a lot sooner than fuses do.
