Amplifier question.

Hi.

I just got into car audio and I have a possibly stupid question.

Lets say I have two subs rated at 500W RMS each and an amp rated at 1000W RMS.

Do the subs share the load, making it a 1000W total or will that overpower the subs?

Nope, you've got it right. In general terms, for a pair of 500W subs you would want a 1000W amp. Just make sure you're matching the final voice coil impedance to the amplifier (1, 2, 4 Ohms, etc).
